Chicken Hearts Sous Vide
No matter which way of eating you’re currently following, Keto, Primal, Paleo, or even the Standard American Diet, you could probably benefit by eating more organ meat. Chicken hearts are an inexpensive way to get some offal into your life (make your meals more offal?) Anyhow, I find them delicious and my favorite way to cook them is sous vide.
Here’s the sauce I usually make. I don’t really bother measuring the spices. Just adjust to taste.
1 cup coconut aminos
curry
ginger
cumin
garam masala
anise seed
sambal oelek
salt
black pepper
1lb chicken hearts
1) Fire up your sous vide device in a pot of water set at 185F.
2) Bag the chicken hearts and sauce in a plastic bag that will hold up to sous vide. I find a normal Ziploc gallon freezer bag does the trick.
3) Place the bag in your water bath and cook for 1 hour.
