The Foolproof Omelet
This is my favorite, foolproof way to make an incredibly fluffy omelet.
Ingredients
5 eggs
1oz heavy whipping cream
any meat, cheese, or vegetables you want inside it
Directions
Pre-heat cast iron in oven at 400F.
Blend eggs and heavy cream.
If you need to cook some meat to go into the omelet do so while your pan heats.
When oven has heated remove pan and coat with a layer of extra virgin olive oil or avocado oil.
Dump egg mixture into cast iron.
Return pan to oven and turn broiler on low.
Cook for 3 - 4 minutes. Eggs will slightly pull inward from the edge of the pan and turn a bit golden on top.
Remove from oven and dump your omelet innards on one half of the egg.
Fold remaining half of egg over innards and serve!
