The Foolproof Omelet

This is my favorite, foolproof way to make an incredibly fluffy omelet.

Ingredients

  • 5 eggs

  • 1oz heavy whipping cream

  • any meat, cheese, or vegetables you want inside it

Directions

  • Pre-heat cast iron in oven at 400F.

  • Blend eggs and heavy cream.

  • If you need to cook some meat to go into the omelet do so while your pan heats.

  • When oven has heated remove pan and coat with a layer of extra virgin olive oil or avocado oil.

  • Dump egg mixture into cast iron.

  • Return pan to oven and turn broiler on low.

  • Cook for 3 - 4 minutes. Eggs will slightly pull inward from the edge of the pan and turn a bit golden on top.

  • Remove from oven and dump your omelet innards on one half of the egg.

  • Fold remaining half of egg over innards and serve!
